Aix\u00ed, seguint estrictament la primera\u00a0llei de la termodin\u00e0mica, transformem\u00a0l\u2019energia continguda en els nutrients que\u00a0ingerim en energia \u00fatil per al nostre organisme,\u00a0mitjan\u00e7ant la digesti\u00f3.<\/p>\n<p class=\"p1\">Els sucs g\u00e0strics de l\u2019est\u00f3mac \u2013que contenen\u00a0\u00e0cid clorh\u00eddric\u2013, juguen un paper\u00a0central en aquest proc\u00e9s, ja que s\u00f3n els\u00a0responsables de produir el medi amb un\u00a0pH proper a 1, necessari per trencar les\u00a0mol\u00e8cules dels aliments en unes de m\u00e9s\u00a0petites i m\u00e9s f\u00e0cilment absorbibles. Per\u00f2,\u00a0de vegades, aquest proc\u00e9s de digerir els\u00a0aliments en medi \u00e0cid causa malestars, o\u00a0fins i tot problemes de salut. Per exemple,\u00a0les sals de fruites contraresten la baixada\u00a0sobtada de pH per mitj\u00e0 de la seva reacci\u00f3\u00a0qu\u00edmica amb els sucs g\u00e0strics. Aquesta\u00a0estrat\u00e8gia pal\u00b7lia de forma immediata els\u00a0efectes d\u2019un mal funcionament biol\u00f2gic\u00a0per\u00f2, tot i que efectiva, no serveix com\u00a0a prevenci\u00f3.
